Abstract

There are many different types of vegetarian diets, most of them do not included meat,fish or seafood, although some may include animal-derived products. Nutritionallyadequate vegetarian diets, including vegan ones, are healthy, and can provide healthbenefits like prevention and treatment of different illnesses. They are suitable in everylife stage, including pregnancy, breastfeeding, childhood, adolescence and also forathletes. This article reviews the most updated data regarding nutrients of special interest for vegetarian people such as proteins, omega-3 fatty acids, iron, zinc, iodine, calcium and vitamins D and B12. Supplements or enriched foods can be more useful dueto the essential nutrient quantities they provide. Variability of dietetics practice amongvegetarians requires an individual diet evaluation. As well as the evaluation of the adequacy of the diets, nutritionists can play a key role in the education of vegetarians,teaching them which are the specific source of nutrients, where they can find them,how to prepare them and how to modify their diets in order to satisfy their needs.
